Recipe: Arugula & Pea Vine Salad

Easily prepared in just 5 minutes to feed 4 adults, this salad is a perfect way to elevate any meal.  

Ingredients
2 cups of pea vines
1 small bunch arugula
1/4 cup pine nuts
1/4 cup cilantro
1 small shallot, sliced
lemon juice & olive oil
Preparation
1.) Toast pine nuts in a skillet over
medium-low heat for about 3
minutes.
2.) Combine pea vines, arugula,
pine nuts, cilantro and shallot.
Toss with just enough olive oil to
coat greens.
3.) Drizzle with lemon juice and
season to taste with salt and
pepper.
